Chocolate Brownies- A Love Affair

If you are craving for chocolates then try Chocolate Brownies.I call them as baked happiness.They instantly change an upset mood to a happy one.Brownies are a cross between a cake and a cookie.Different textures are there but i prefer the goey one.Sharing a very easy recipe that you all can try out easily at home.

 Recipe for Chocolate BrowniesBrownie

Ingredients

  • All purpose flour/maida- 1/2 cup
  • Cocoa powder- 4 tbsp
  • Plain Curd- 2 tbsp
  • Melted butter- 1/4th cup (room temperature)
  • Powdered sugar- 5 tbsp
  • Vanilla essence- 1/8th tsp
  • Melted dark chocolate -1/4th cup
  • Dry nuts -1/4th cup (roughly chopped)
  • Baking soda-1/4thtsp
  • Butter for greasing the baking tin
  • Hot water- 1/2 cup
  • Butter paper for lining the tin

Instructions

  • Sift together the flour and cocoa powder using a sieve and keep it aside.
  • Measure and take the curd in a bowl and add baking soda and mix it well.
  • Take a big mixing bowl and add the melted butter,powdered sugar,vanilla essence and 1/2 cup hot water and whisk till everything is mixed well.
  • Add the curd and soda mixture to the above mixture and again mix it well.
  • After that add the melted dark chocolate and mix well.
  • Now add the flour mixture batch by batch and also dry nuts and make a smooth batter of dropping consistency.
  • Grease a baking tray with butter and then line with butter paper keeping little high on the sides.
  • Pour the batter into the greased tin and even the surface nicely.Put some dry nuts on top.
  • Now bake it in a preheated oven for 15 to 20 mins at 180*C.
  • Check with a stick before taking it out.If the stick comes out clean then its done.

 

 Your chocolate brownies are ready to serve now.
Tips: chocolate brownies
  • Cool the brownie tin a little and refrigerate it or a hour.This way the texture is perfect.
  • To cut it into perfect squares,dip your knife in hot water and cut it.This way you will get perfect shapes.
  • Grease your tin nicely as stated above to avoid the brownie from getting stuck in the tin as sugar content is little more.
  • You can serve hot with a dollop of vanilla ice-cream or cool it down and have it

Fish Pockets – Low Fat Easy,Fast and Healthy Fish Recipe

Fish is my all time favourite.My family is a fish lover family.So I keep experimenting with it.These fish pockets are healthy pouches of juicy fish fillets.It looks fancy but preparation is simple and very less fat.

Fish Pockets -Low Fat,Easy,Fast and Healthy Fish Recipe
Ingredients
Fish
  • Fish Fillets-4 to 5
  • Olive oil – 2 tsp
  • Salt and freshly ground black pepper according to taste
  • Small cherry tomatoes – 3 to 4 or small chopped tomatoes – 3 tbsp
  • Onions-1 medium (finely chopped)/ or chopped shallots
  • Lemon juice – 2 tbsp
  • Dried oregano-1 tsp
  • Dried thyme-1tsp

 

Instructions:
  • Preheat the oven to 220*C for 10 mins in bake mode.Fish

 

  • Take the fish fillets in a mixing bowl and rub it with salt,pepper powder and olive oil.Keep it aside.
  • Take a bowl mix together tomatoes,chopped onions or shallots,dried oregano,dried thyme and lemon juice.

  • Now take a rectangular piece of aluminium foil and fold it to make a square shape.Then fold from all sides to make a small well type as shown in above picture.Make the pockets according to the size of the fish fillets.
  • Take one aluminium pocket and place a fish fillet and spoon some tomato mixture over the fillets.Repeat the same with all the fish fillets.
  • Take a baking tray and place these fish pockets on it and bake for 20 to 25 minutes and its done.

 

Tips:

  • In these pockets you can use spring onions and different colours of chopped bell peppers too.
  • I prefer fatty fish to bake so that less oil is used.The fish cooks in its own fats.
  • Fresh oregano and thyme can be used too.Dried ones are easily available in departmental stores.

Prepare these easy fancy fish pockets and make your fish lovers happy.The aroma is different and the presentation invites everyone.You can serve it as starters.

Sesame Chicken-Quick Starter in 20 mins

SESAME CHICKEN

RECIPE:

Ingredients

  • Chicken – 300gms cut into bite size pieces
  • Tomato Ketchup – 3 tbsp
  • White vinegar – 2 tbsp
  • Soya sauce – 3 tbsp
  • Salt – to taste
  • Chilli sauce – 2 tbsp
  • Garlic powder or paste or both – 2 tbsp
  • Lemon juice – 3 tbsp
  • Sugar – 1 tsp(optional)
  • Corn flour – 1 cup+2 tbsp
  • Cold water- 1 tbsp
  • Black pepper powder – 1 tsp(optional)
  • Honey – 1 tsp
  • White sesame seeds – for topping
  • Oil – 1 tbsp+1 tsp for greasing the baking dish

 

INSTRUCTIONS:

  1. Preheat the oven to 220*C and grease the baking tray with oil.
  2. Take a mixing bowl and prepare a sauce by whisking together these ingredients-Honey,ketchup,sugar,vinegar,soya sauce,salt,garlic powder,garlic paste,chilli sauce,lemon juice and black pepper powder.
  3. In another small bowl add 2 tbsp corn flour and 1 tbsp cold water,mix it well and add it to the sauce and whisk it properly.
  4. Now add 1 cup cornflour and little salt to the chicken pieces and mix well so that chicken pieces are coated well.Take a pan and add 1 tbsp oil and saute the chicken for 2 to 4 minutes.
  5. Add the chicken pieces to the prepared sauce mentioned in point number 2 and transfer it to the baking tray.Sprinkle the sesame seeds on top and bake it for 15 to 20 mins in a preheated oven at 220*C. After 20 minutes take out the starters and serve hot.Garnish it with spring onions.
  6. You can also prepare this chicken recipe in a pan.Just pour the sauce to the slightly fried chicken pieces and cook for 20 minutes in medium heat and its done.

TIP:You can line the baking tray with aluminium foil and then grease it to avoid sticking of chicken pieces to the baking tray.

RECIPE for Lemon Mojito Mocktail

LEMON MOJITO
Ingredients:

1.Lemon chunks- 4 to 5pieces

2.Powdered sugar-1tsp

3.Mint leaves- 4 -to 7

4.Crushed  ice-1/2 cup

5.Club soda/Sparkling water-as required

6.Lemon wheels(garnishing)

 

 

Method:

1.Take a glass,put the lemon chunks,mint leaves,sugar powder and add lime juice and muddle it with a muddler.

2.Crush some ice cubes from the freezer and add to the glass.

3.Now add sparkling water/soda water till the neck of the glass.Stir  well with a stirrer and serve chilled.

4.Garnish the mocktail glass with a lemon wheel and decorated straw.

 

*The above ingredients are given for preparation of 1 glass of Lemon Mojito.

Rose Kheer-A Quick Ramadan Dessert

The Islamic Calender’s ninth month is known as Ramadan Month.Muslims around the globe fast for almost 30 days during this month.The essence of fasting is spiritual..After the whole day fast they break it in evening after their prayers.A lot wonderful preparations are made which is enjoyed with family and friends.So sharing a quick dessert,Rose Kheer that you can try in your Ifftar.

Rose Kheer-A Quick Ramadan Dessert

RECIPE:
Ingredients

1.Milk  – 1 cup

2.Condensed milk -1/2 cup

3.Sugar -1/4th cup

4.Vermicelli – 1 cup(boiled for 5 to 7 mins)

5.Rose essence- ½ tsp

6.Water -1 cup

7.Raspberry red/Rose pink colour- 2/3 drops

8.Yellow colour – 2/3 drops

9.Green colour – 2/3 drops

Instructions

1.In a pan add water and sugar and boil it till sugar dissolves.Let the sugar syrup cool down a bit then divide it into 3 separate bowls and add the 3 colours separately to each bowls.

2.Take a pan and boil the vermicelli for 5  to 7 mins till its cooked.Strain it and keep aside.

3.Now divide the boiled vermicelli also into three equal parts and soak them separately in the coloured sugar syrups for 5 to 7 mins and then strain it and keep aside the coloured vermicellis.

4.Heat a pan and pour milk to it,add the condensed milk and let it come to boil.Stir continuously for around 10 mins.When the milk is bit thick ,keep it in low flame and add the rose essence.

5.Now add the coloured vermicellis together to the milk mixture and stir it nicely for a minute and its done.

Take it out in a serving bowl  and after the rose kheer cools down a bit,keep it in the refrigerator for half and hour.It tastes divine when served chilled.Prepare this rose kheer in your ifftar desserts and enjoy with your family and friends.I personally believe that simple preparations create wonders.Keep visiting this space for more recipies.Do try it and count me in your blessings and enjoy.

     This is a very easy and quick dessert recipe of Strawberry Mousse.You can easily prepare it at home with very fewer ingredients and impress everyone.

Ingredients

  • 1.Whip cream- 1 cup
  • 2.Strawberry crush- Half cup
  • 3.Raspberry red colour- 1 Tsp
  • 4.Strawberry essence – 1 tsp
  • 5.For Garnishing- Fresh strawberries and mint leaves

Cooking Directions

  1. Take a mixing bowl and beat the whipped cream with an electronic beater from low to high speed for 15 mins(approx) till the cream becomes very thick and fluffy.While beating the cream in between add the raspberry red colour and essence to it.This will give a lovely pink colour and flavour to the whipped cream.Fill all the whipped cream into an icing bag with a nozzle.
  2. For presentation take a dessert glass, fill half the glass with the prepared cream in the icing bag, add 1 tbsp strawberry crush and then fill the glass with cream again.Following the same process fill the other dessert glasses with the remaining cream.
  3. Lastly, garnish with fresh strawberries and mint leaves and your strawberry mousse is ready.Keep the dessert glasses in the deep freezer for an hour to set, serve chilled and enjoy.

Easy Mughlai Chicken is a very easy recipe for the main course.This recipe is quick and it’s too delicious.The spices are the core ingredients of this recipe.This recipe always saves me whenever suddenly guests come for lunch or dinner. My family’s one of the favorite chicken recipes is Mughlai chicken.

 

Recipe for Easy Mughlai Chicken

Ingredients

MUGHLAI CHICKEN
  • 1.Chicken – 500gms
  • 2.Onion – 2 medium
  • 3.Green Chillies – 3
  • 4.Ginger Garlic Paste – 3 tbsp
  • 5.Yogurt – 6tbsp
  • 6.Butter- 50gms
  • 7.Coriander leaves- for garnishing
  • 8.Salt- to taste
  • 9.Oil 3 tbsp

Tadka Masala

  • 1.Aniseeds- 2
  • 2.Cinnamon- 3 (1 inch long)
  • 3.Cloves- 7-8
  • 4.Green Cardamom- 5
  • 5.Bay leaves- 2/3

Mughlai Masala

  • 1.Cashew nuts- 8
  • 2.Almonds – 16
  • 3.Peppercorns- 12
  • 4.Cinnamon- 2 (1 inch long)
  • 5.Turmeric – 1/2tsp
  • 6.Red chilies- 4
  • 7.Cumin seeds- 1/2tbsp
  • 8.Coriander seeds- 2tbsp
  • 9.Cloves- 2/3
  • 10.Green Cardamom- 2/3

Cooking Directions

  1. Dry roast all the Mughlai spices, grind it with a little water and make a fine paste.
  2. Heat oil in a pressure cooker, add cinnamon, cardamom, bay leaves, cloves & aniseeds (tadka ingredients)
  3. Now add green chilies, onions and cook it until it turns to golden brown.
  4. Add ginger garlic paste and saute well.
  5. After that add the Mughlai masala paste, butter, yogurt, salt, mix it well and cook for few mins.
  6. Once the masala is mixed well add the chicken pieces and mix it with the masala, cook for few mins.
  7. Add water according to how much gravy is required.
  8. Cover it and pressure cook for 3 whistles in a low flame.And your spicy Mughlai Chicken is ready.
  9. Garnish it with coriander leaves
